I made this for my husband in lieu of birthday cake at his request. It blew him away. We're still working on it a week later- it's intense!
1 box (19.5 oz) chocolate fudge brownie mix
1/2 cup veggie oil
1/4 cup water
2 eggs
1 8-oz pckg cream cheese, softened (i used light)
1 can sweetened condensed milk
1/2 cup peanut butter(they say smooth, i used crunchy)
1 8-oz bag Heath bits
1 cup milk chocolate chips
3 Tbs heavy or whipping cream
1. Heat oven to 350 degrees Fahrenheit. Spray or butter 13x9 pan. (mine's more like 12x9 so it was very thick and dense!)
2. In a medium bowl, stir brownie mix, oil, water and eggs 50 strokes with spoon. Spread batter in pan and set aside.
3. In large bowl, beat the cream cheese with electric mixer on medium speed until fluffy. Add condensed milk and peanut butter; beat until smooth. Stir in 1 cup of the Heath bits. (i threw the whole bag in as my brownies were so tall i didn't know if i'd have room for the topping!) Spoon mixture over the batter; spread evenly.
4. Bake 30 to 40 minutes, or until cheesecake layer is set and edges are light golden brown. Cool on cooling rack 30 minutes, then refrigerate at least 40 minutes.
5. In small microwaveable bowl, combine milk chocolate chips with cream. Microwave uncovered on High 40 to 60 seconds or until chips are melted; stir until smooth. Spread over cheesecake layer and sprinkle on remaining Heath bits. Cool completely for about an hour. (I refrigerated so the chocolate would set.) Store covered in fridge.
